Tonkotsu Volcano Kazan Shoyu Ramen @ Northpoint City Mall in Yishun [Singapore]

Northpoint City Mall is a popular suburban shopping centre located in the infamous town of Yishun and compared to its opening way back in 1992; it has undergone numerous renovations and extensions with changes of retail mix being a constant!

South Wing was opened in 2018 and Tonkotsu Volcano Kazan Ramen has been at the same location for the past eight years! Embarrassingly, it was my virgin visit just a few days ago. Nevertheless, better late than never.

Signature for the eatery would be its Volcano Kazan Ramen; so despite the the five-step process, I am so not going for the last 5th step as it would spike my carbohydrate intake!

Pot of rich broth was placed on our table. Honestly, I thought I should just pour into the bowl and take a sip. Thankfully, I was delayed due to the taking of photographs.

Next thing I knew, a stone pot with a red metal lid, shaped like a cap from the tin man for Wizard of Oz, was placed on my table and the server poured more than half of the contents into the hotpot. So glad I didn't shame myself.

Billows of smoke soon started sprouting from the opening on top of the metal cap, almost like the scene before a volcano eruption! Kind of a visual therapy in my honest opinion, and definitely entertaining for kids.

Short video for reference!

Take of the lid and the remaining contents from the broth pot was then poured into the stone pot. Now, from the photograph, it didn't look like much activity in the beginning.

Shortly after, the soup in the stone pot started bubbling, vigorously!
Gosh, almost like a crime scene where a dead body was thrown in!

Give it a good stir before indulging! A sip of the pork based broth was an essential first step; it was said to be soy-sauce based so no surprise here. It was hearty and nice, but I personally thought my mom's one was better as there's a stronger seaweed infusion, which felt more like the soup in typical Japanese ramen.

What kind of ramen noodles do you prefer? I always thought it's only one kind; the ones that's mee kia like but slightly thinner. But the ones I had, had thicker strands, almost like ee-mee! Al-dente; they were slurpy good, just that my personal preference is the thinner kind.

The thing I enjoyed the most was the chashu; well marinated and sliced thickly, each bite was of utmost satisfaction. Only thing to complain about was that some parts were so fatty; they were frowned upon by my mom!

In spite of my best efforts, I really couldn't stomach another morsel. Given that we still have more than half left, we paid S$0.40 for a takeaway box! Waste not!
