Apiary Ice Cream & Waffle along Neil Road in Singapore

It seems like I am always on the lookout for ice cream / gelato but you can't really blame me when there is a plethora of them here in the little red dot. And it's always nice to have something sweet after a satisfying meal. 

This particular ice cream cafe, Apiary, is nestled along Neil Road, in a cluster full of historical shophouses that owners can't demolish at will due to heritage laws, and near to Singapore's most expensive public housing; The Pinnacle@Duxton

The moment I stepped into the cafe, my first reaction to Alex was "How come no tables / chairs"?! I don't mind small spaces (think No Horse Run) so long I can sit down and enjoy my ice cream.

Turned out there was a second floor where the seating was; which would mean more challenges for those with mobility issues. Oh well, guess the operator would figure something out as there was ample space to put out a few tables on the ground floor.

Seating capacity on the second floor was generous for about 40 persons and space in between tables would have more than fulfilled the stricter safe management measures that were in place one to two months back.

Stairwell in the middle allowed plenty of sunlight! 

Street view in an air-conditioned surrounding; frankly, this would be a great, cozy place to just chill for the entire day but to be fair to the operators, let's be considerate during peak hours.

Let's order! Now that sampling is allowed, I am looking forward to having a taste of interesting sounding flavors before making a decision on what to have! It's so hard to decide whenever there are so many to choose from.

18 different flavors to choose from at Apiary; ranging from the common ones like vanilla bean, rum and raisin to unique ones like blue milk, despicable, white peach & gingerflower sorbet, lychee and yuzu sorbet etc. 

After payment, the cutleries and pager would be given. I generally have no issue in usual times but now that I am older, climbing up and down the stairs in my usual clumsy self is a risk! 

As we visited during non peak, we were served quickly and our order was completed in less than ten minutes! Our order of waffle with two scoops of ice cream, and a serving of moscato blanc tea by Gryphon Tea Company. 

Moscato Blanc Tea - while the tea set had a classy, exquisite design, it was heavy! And this was an additional risk for a person with butterfingers. 

Tea wise, it's not my cup of tea, pun intended. The taste was interesting but the aftermath was an astringency tinge that was too much for me to handle. 

Now on the main stars; waffle with one scoop of blue milk and one scoop of lychee and yuzu sorbet. The SOP (standard operating procedures) was to have chocolate with maple syrup; if you prefer maple, you can let them know in advance. Obviously, I didn't know. 

Ice cream first; bet you would know which is which. Lychee and Yuzu Sorbet was delightful with bits of yuzu that permeated the mouth with a fruity aroma that was so enticing! The lightly sweet sourness was welcome given the amount of food I was having that day! p.s. can't really taste the lychee though.

Blue Milk - it's actually pink Himalayan salt with blue pea flower and milk! Loving the smooth, creamy richness peppered with a balance saltiness! 

Waffle - as you can see, it was fluffy with pockets of air! Coupled with a light crispness and a buttery flavor, it would have been one of the better waffles I had. Only issue, I didn't like having chocolate sauce, although as mentioned earlier, I would make it a point to ask for only maple syrup in the future!
