Nam Sing Hokkien Fried Mee (Serving Hokkien Mee Since 1960) @ Old Airport Road Hawker Centre [Singapore] #namsinghokkienmee

For reasons beyond my comprehension, i have been having cravings for hokkien mee and while i did have one at Chong Pang Hawker Centre; it failed to satisfy and i decided to travel to Old Airport Road Hawker Centre once again last Friday to check out Nam Sing Hokkien Mee! 

Operating since 1960, albeit moving a few times over the years, the store has achieved a number of accolades and maintained a rather strong and loyal fan base. Remember, the way to order is to go straight to the order-taker. Those people lingering around are likely from table number beyond 175 and hence, waiting for their orders to be served.

Years of experience had taught the operators to be dead efficient with plastic bags placed on the side for easy pull-out. I heard that the staff could be rude but i think it's a matter of customers being indecisive about what they want and this kind of things can really piss off those who are sticklers for efficiency.

This came to my table after twenty minutes of wait. Remember i mentioned about the people waiting for their orders? The store will only deliver to tables that are numbered 175 and below; i.e. those closer to their store give that the hawker centre has over a hundred stalls.

Interesting fact; they don't serve sambal chilli and in its place was a saucer filled with sliced chilli submerged in soya sauce and topped with half a lime! And i see diners asking for more sliced chilli on their noodles; which i found strange. 

Anyway, i am good with just the hokkien mee with any chilli. It's delicious despite being relatively dry without much broth. However, every strand appeared to have soaked in the broth and its result is a burst of flavourfulness in every scoop i put in my mouth! And i absolutely love it when there's more bee hoon than yellow noodles! 

Craving satisfied and adding the stall to my list of must-eats in Old Airport Road Hawker Centre. I tell you; i would be in a bind the next time i am there as there are just too many things i want to eat.
